Spicy Ginger Cookies *vegan friendly*

The only ginger cookie recipe you’ll need. These flavor-filled cookies have all the right spice, plus they happen to be vegan, which makes for even better sharing. 

THE INGREDIENTS:

Makes 24 big cookies

• 1 cup Olive Oil (Or any desired oil) 

• ½ cup molasses 

• ½ unsweetened almond milk (or soy) 

• 2 cups sugar 

• 2 tsp vanilla extract 

• 3 ½ cups all-purpose flour 

• ¼ cup ground ginger (if you do not want the intense ginger flavor, reduce to 2-3 Tbsp) 

• 2 tsp baking soda 

• 1 tsp cinnamon 

• ¾ cup chopped crystallized ginger (small chunks) 

• Raw sugar for rolling 


THE RECIPE:

1. Preheat oven to 325, and line a baking sheet with parchment paper.

2. In a large bowl, whisk together oil, molasses, almond milk, sugar, and vanilla.

3. In a medium bowl, whisk together flour, ginger, cinnamon, and baking soda.

4. Pour the flour mixture into the wet ingredients and stir until just combined.

5. Fold in crystallized ginger pieces into the dough.

6. Get a small bowl and fill it with raw sugar.

7. Scoop about 2-3 tbsp of dough for each cookie, roll the dough into a ball, and then roll again into the sugar to cover the dough. Place on baking sheet. These cookies spread in the oven, so space them out on the sheet, only 6 cookies per sheet).

8. Bake cookies for 12-14 minutes until the edges are just crisp and enjoy!

This recipe makes a lot of dough. I normally like to bake half and then shape out the rest of the dough into balls, place it into a freezer-safe bag, and freeze it to bake whenever I want!
